On Wednesday, June 15, Blue Bird Kitchen will again be offering handmade cheeses to CSA members at the pick up site (Burnt Fork BBQ) in Decatur.  Fresh goat’s milk Chevre made with organic milk is a delicious light cheese that’s great on bread or crackers, as well as in salads and dishes like lasagna that call for a soft cheese for layering with sauce and pasta.

Lightly salted Feta, also goat’s milk, will be offered this week, too.  This cheese may be crumbled or allowed to dry further and grated.  There may also be some Ricotta, a slightly sweet cheese made of whey, a byproduct of cheesemaking, on offer.  Ricotta is a perfect substitute for its much richer cousin, mascarpone, in desserts like tiramisu.

Blue Bird Kitchen cheeses are made using organic goat’s milk, sea salt (if needed), and pure spring water.  No additives such as potato starch, soybean fiber, peanut products, or preservatives are ever used.  These fresh cheeses are best stored covered in the refrigerator; for optimal flavor, allow to come to room temperature before serving.  Chevre may also be frozen for up to 6 months.
