Cutting in the cover crop

With all this crazy weather, spring has arrived early for us this year! We have been quite busy keeping up with the new plantings and have just harvested our first crop of the year, for the local Jasper restaurant 61 Main. Our French Breakfast radishes will be put to good use at this restaurant!

61 Main is a Jasper staple, and is always crafting unique dishes and seasonal, sustainable fare from local farms & skilled artisans. My favorite is the braised short ribs – the style changes, but they are always delish! If you are in the area, this restaurant is a must to sample some of the best local “farm-to-table” food around!
